Ingredients

  • 1 roll (16 oz) refrigerated sugar cookie dough
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • 1 cup fresh strawberries, hulled and diced small

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and cover the baking tray with parchment paper.
  2. Cut the chilled cookie dough into 12 equal circles. Place them on a baking sheet, leaving 5 cm between each circle, as they will expand during baking. Bake for 10-12 minutes, or until the edges begin to turn golden. Cool completely on a wire rack. (If they rise too much, gently press the center of each one with the back of a spoon immediately after removing them from the oven to flatten the surface before frosting)
  3. In a medium bowl, use a hand mixer to beat the softened cream cheese until completely smooth  — Add the powdered sugar and vanilla extract, and continue beating until the mixture is creamy and free of lumps (Make sure the cream cheese is at room temperature before starting, otherwise, unsightly lumps will appear in the frosting)
  4. Spread a generous amount of cream cheese evenly over each chilled biscuit. Leave a small border around the edges to prevent the cream and fruit from sliding off the sides.
  5. Place a few small blueberries in the top left corner of each decorated cookie to represent stars. Then use diced strawberries to make two or three horizontal lines beside and below the blueberries. Serve the mini fruit flag pizzas immediately or keep them chilled in the refrigerator until party time!
