Meatloaf Mixture
- 1 lb ground white meat chicken
- 1/2 lb ground dark meat chicken
- 1/3 cup chopped onion
- 2 garlic cloves, minced
- 1 tbsp mayonnaise
- 1/4 cup minced parsley
- 1/3 cup chopped red bell pepper
- 1/3 cup breadcrumbs
- 1 egg, whisked
- 1 tsp salt
- 1/2 tsp cracked black pepper
Topping
- 2 tbsp extra virgin olive oil
- 2 garlic cloves, very finely minced
- 1 tbsp minced onion
- Pinch of salt and pepper
Directions
- In a large bowl, gently mix all of the meatloaf ingredients together. Do not overwork the mixture.
- In a small bowl, combine all of the topping ingredients.
- Form the meatloaf and place it in a loaf pan or on a baking sheet.
- Brush the topping evenly over the entire loaf, making sure to use all of the garlic and onion.
- Bake in a 375°F oven until the center reaches 165°F on a meat thermometer.
- Remove from the oven and let rest for 10 minutes before slicing and serving.
Tip: If you can only find one-pound packages of each type of minced chicken, use both pounds together to make a larger meatloaf, or save the leftover pieces of dark chicken meat for burgers.
