- 1/4 cup granulated monk fruit sweetener
- 1/2 cup Dark chocolate chips (dairy-free)
- 1/4 cup Coconut Milk (canned, full fat)
Instructions
- Line a large baking tray with parchment paper (for round cookies, you can use a small cookie cutter or draw a small circle as a guide on the parchment paper).
- Sift the almond flour and powdered sweetener into a medium-sized bowl (discard any large pieces of almonds remaining in the sieve).
- In a glass or metal bowl, whisk the egg whites and cream of tartar on medium speed until frothy. Gradually add the granulated sweetener while continuing to whisk until stiff peaks form.
- Add the almond flour mixture to the egg whites. Fold gently with a rubber spatula until the batter is smooth and flows slowly off the spatula. Do not overmix.
- Spoon the batter into a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheet.
- Tap the baking sheet on the counter several times to release the air bubbles.
- Leave the macarons to rest at room temperature for 30-40 minutes (or until they no longer stick to your finger when touched gently).
