Easy Step-by-Step BBQ Burnt Ends

Ingredients
- 3 lbs beef brisket point
- 1/4 cup BBQ rub
- 1/2 cup beef broth
- 1 cup BBQ sauce
- 2 tablespoons brown sugar
- 3 tablespoons butter
Instructions
- Clean the end of the brisket to remove any thick, hard bits of fat, leaving a layer of fat about 1/4 inch thick (To keep the meat moist during cooking).
- Rub the meat thoroughly with the barbecue seasoning, pressing it in so it adheres. Let it marinate for 30 minutes.
- Preheat the chimney to 250 degrees Fahrenheit, then place the meat on the chimney, fat side up, and cook for 4-5 hours (Or until its internal temperature reaches 165 degrees Fahrenheit).
- Wrap the brisket tightly in butcher paper or aluminum foil. Pour in the beef broth, seal it tightly, then return it to the chimney.
- Continue cooking for another 2-3 hours (Or until the internal temperature of the breast meat reaches 195 degrees Fahrenheit).
- Remove the piece of meat from the smoker and let it rest for 20 minutes.
- Cut the brisket into 1-inch cubes and place them in a disposable aluminum pan.
- Add the barbecue sauce, brown sugar, and butter pieces. Stir well until the briskets are coated in the sauce.
- Put the pan back on the smoker, uncovered, and cook for about 1 more hour, until the sauce is thick, sticky, and caramelized.
Notes
My advice to you for getting the best outer crust is to make sure to dry the piece of meat before applying the marinade (Not necessary but preferable).
