Ok so this rice and cream cheese is what I make when I have zero energy. It’s basically my ‘I can’t even’ meal. But it’s so good. It’s just this warm, creamy bowl of stuff that tastes amazing. It’s not fancy at all but it hits the spot every single time. Good as a side dish, or just… the whole meal for dinner. It really does make a boring night a lot better.

The Stuff You Need
It’s not a big list. You might have everything you need right now.
- 1 tbsp butter
- 2 garlic cloves, chopped small
- 1 cup long-grain white rice
- 2 cups vegetable broth
- 4 oz cream cheese, cubed up
- 1/4 cup parmesan cheese
- Salt and pepper
- 1 tbsp fresh chives, chopped

Making the Rice
Step 1: Cook the Garlic
Melt the butter in a pot on medium heat. Add the chopped garlic. Stir it for a minute, you just want to smell it cooking. Don’t let it get brown, that tastes bad.
Step 2: Toast the Rice a Little
Dump the rice in. Stir it around in the butter and garlic for a minute or two. This step seems like you could skip it but don’t, it makes the rice taste much better.
Step 3: Cook It
Pour in the broth, give it a quick stir. When it starts to boil, turn the heat way down to low and put the lid on. Leave it alone for 15-18 minutes. Seriously don’t lift the lid.
Step 4: Add the Cheese
This is how to make rice with cream cheese really creamy. Take the pot off the heat. Throw in the cream cheese cubes and the parmesan. Now just stir. - Add salt and pepper so it tastes good to you. Put the chopped chives on top right before you serve it.
