Enjoy summer with these delicious and refreshing treats! Fresh strawberries are hollowed out and filled with a creamy, no-bake lemonade pie filling. They're incredibly easy to make, a lovely size, and the perfect refreshing dessert for warm days.

Ingredients

  • 2 lbs fresh strawberries (Lovely to use large berries)
  • 8 oz cream cheese, softened
  • 1/2 cup sweetened condensed milk
  • 1/4 cup frozen lemonade concentrate, thawed
  • 1/4 cup graham cracker crumbs

Optional

  • 1 tsp lemon zest

Instructions

  1. Wash the strawberries and dry them completely.
  2. Cut off the green, leafy tops and use a paring knife to hollow out the center of each berry. Cut a small piece off the bottom so the strawberries can stand upright on the plate.
  3. Beat the softened cream cheese in a medium mixing bowl with a hand mixer until it is completely smooth.
  4. Pour the sweetened condensed milk and thawed lemonade concentrate into the bowl, mixing until everything is perfectly blended.
  5. Scoop the cream cheese mixture into a piping bag (or a zip-top bag with one bottom corner snipped off).
  6. Squeeze the filling into each hollowed-out strawberry, filling it just a bit past the top so it looks nice and full.
  7. Sprinkle the tops with graham cracker crumbs and lemon zest, then chill in the refrigerator for at least 30 minutes so the filling sets.

Notes

Strawberries – Make sure the strawberries are completely dry inside and out before placing them in the tubes, otherwise the filling may slide out.
