Last weekend was one of those hot, sticky weekends where everyone was cranky. and the thought of cooking a proper meal felt impossible. I’d bought these wild-looking rainbow mini bagels from the store, and they were just sitting on the counter, mocking me. In a moment of pure desperation, I chopped them up, threw in whatever was in the fridge, and stuck them in the oven. The result? Five minutes of blessed silence. These Rainbow Bagel Breakfast Sliders have since become the thing I make when I just can’t deal.

What You’ll Need
This is more of a guide than a strict recipe. Use what you have. No one will notice.
- A 12-pack of rainbow mini bagels
- 8 large eggs
- Shredded cheddar, maybe a cup or so
- Shredded mozzarella, same amount, for the cheese pull
- Smoked turkey slices (about 8), chopped up. Or some beef sausage, crumbled.
- Half a stick of unsalted butter
- A dollop of Dijon mustard
- A bit of minced onion or just some onion powder.
- A sprinkle of poppy seeds
- A tiny splash of Worcestershire sauce
- Salt, pepper

How It’s Done
The best part is how few dishes this makes. A pan for the eggs, a bowl for the sauce, and the baking dish. That’s it.
Step 1: The Bagels
Heat the oven to 175∘C (350∘F). Don’t bother separating the bagels. Just take a bread knife and slice the whole connected block in half, like you’re opening a book. Put the bottom half in a 9×13 baking dish.
Step 2: The Guts
Scramble your eggs. My only real tip here is to pull them from the heat while they’re still soft. They finish cooking in the oven, and it keeps them tender. While that’s happening, chop the turkey. If you’re making vegetarian breakfast sliders, this is where you’d throw in some cooked mushrooms or whatever you’ve got.

Step 3: Put It Together
Throw half the cheese on the bagel bottoms. Then the eggs, then the turkey. Then the rest of the cheese. Put the bagel tops back on. It’ll look like a messy, colorful brick. These aren’t supposed to be neat cheesy egg sliders.
Step 4: The Topping
Melt the butter and stir in the mustard, onion, poppy seeds, and Worcestershire. This weird sauce is what makes them great. It crisps up the bagel tops and the flavor sinks in just enough. Every cheesy baked bagel recipe needs something like this.
Step 5: Bake
Pour the butter mixture over the top. Try to get it all over. Then into the oven for 20-25 minutes. It’s done when the top is brown and the cheese is bubbling out the sides. You should probably let it rest for a minute before you cut it, but we never do.
