Ingredients

  • Large egg – 1
  • Light brown sugar, packed ½ cup
  • Canola or vegetable oil ⅓ cup
  • Granulated sugar ¼ cup
  • Sour cream or Greek yogurt ¼ cup
  • Vanilla extract 2 teaspoons
  • All-purpose flour 1 ¼ cups, plus additional as needed
  • Baking powder ½ teaspoon
  • Baking soda ½ teaspoon

  • Mashed ripe bananas 1 cup (about 2 large or 3 small)

Step-by-Step Instructions

Step 1: Preheat the oven to 350°F. You will need a 9×5-inch loaf pan for this. Be sure to spray the loaf pan well with cooking spray and dust it with flour to prevent sticking.

Step 2: In a large bowl, add the first six ingredients (egg, brown sugar, oil, granulated sugar, sour cream, and vanilla) and whisk them all together until well combined.

Step 3: Now, add 1 1/4 cups of flour, baking powder, baking soda, and salt to the bowl and fold in with a flat spoon, or stir gently with a spoon, until the ingredients are well combined — Tip:  It’s really important not to overmix here.

Step 4: Add the mashed banana and fold it in gently until blended.

Step 5: Toss the quartered strawberries with 3 tablespoons of flour until well coated (this prevents them from sinking). Now, gently fold the coated strawberries into the batter — tip: The batter should be on the thicker side. Because bananas and berries have different moisture contents, you may want to add up to 1/4 cup more flour if it seems too thin. A thicker batter is best because the berries will release water as they bake.

Step 6: Remove the mixture to the prepared pan, and smooth the top lightly with a spoon.

Step 7: Bake for 55 to 60 minutes, or until the top is golden brown and the center is set. To check, insert a toothpick into the center; it should come out clean or with a little moist crumb — Tip: To prevent the top and sides from browning too much before the center is done, loosely drape a sheet of aluminum foil over the pan for the last 10 minutes or so of baking.
