Prepare delicious pineapple rice with shrimp in less than 30 minutes! It's a great family-friendly meal that uses rice, tender shrimp and delicious pineapple chunks for a perfect quick dinner.

Ingredients

  • 3 cups cooked white rice (Chilled)
  • 1 pound medium shrimp (Peeled and Deveined)
  • 1.5 cups fresh pineapple chunks
  • 2 tablespoons vegetable oil
  • 3 cloves garlic (minced)
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 1/4 cup sliced green onions
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. Heat one tablespoon of oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for about 2 minutes per side until they turn pink. Remove the shrimp and set them aside on a plate.
  2. In the same pan, pour in the remaining oil. Toss in the garlic and carrots, cooking for about 2 minutes until the carrots start to soften up.
  3. Stir in the chilled rice — Tip: Day-cold rice is best as it prevents the pineapple and shrimp rice from becoming mushy. Break up any clumps with your spoon and fry for 3 to 4 minutes.
  4. Add the soy sauce, sesame oil, peas, and pineapple pieces, and stir everything together until the rice is coated.
  5. Return the cooked shrimp to the pan and stir everything for 2 minutes or less until the entire meal is heated through.
  6. Garnish the dish with chopped green onions before serving and enjoy.
