Peach Feta Salad: The Recipe I Actually Make All Summer

I’ve been living on this Peach Feta Salad. It’s basically just a bowl of ripe peaches, salty feta, and some herbs. When it’s this hot out, and I see peaches on the counter, this is just what happens. It takes no time and doesn’t heat up the kitchen. That’s all there is to it.

What I Use for This Peach Feta Salad

Don’t write this down, just get things that look good.

  • The Salad Stuff:
    • 3 ripe, juicy peaches. Don’t bother with the hard ones.
    • A pint of cherry tomatoes, halved.
    • A block of feta in brine. You crumble it. The other kind is dust.
    • Some thin slices of red onion.
    • A bunch of basil. Torn, not chopped.
    • Some mint.
    • Toasted pecans, if you have them. They’re good for crunch.
  • The Dressing:
    • Olive oil.
    • A whole lemon.
    • Honey.
    • Dijon mustard.
    • Salt, pepper.

The Assembly Process

It’s just a few steps. Don’t overthink it.

Step 1: The Dressing

Put the oil, lemon juice, honey, and mustard in a jar. Lid on. Shake it hard. Give it a taste. You know what to do.

Step 2: The Base

Bowl. Peaches, tomatoes, onion. A quick toss. Don’t smash the peaches.

Step 3: The Rest of It

Throw in the basil and mint. Add the feta you crumbled. And the pecans. Fold it all together once. Stop stirring.

A super fresh salad with sweet ripe peaches salty feta herbs and a simple lemon vinaigrette. Perfect for hot summer days when you dont want to cook.

Ingredients

  • 3 ripe peaches sliced
  • 1 pint cherry tomatoes halved
  • 1/2 cup feta cheese crumbled from a block
  • 1/4 red onion sliced thin
  • A handful of fresh basil leaves torn
  • A handful of fresh mint leaves chopped
  • 1/2 cup toasted pecans (optional)
  • 1/4 cup olive oil
  • Juice from 1 lemon
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper

Instructions

Step 1

Put all the dressing stuff in a jar. Screw the lid on tight and shake it hard. Done.

Step 2

Get a big bowl. Add the peaches tomatoes and onion. Give it a light toss.

Step 3

Throw in the herbs the feta and the pecans if you're using them. Fold it all together. Dont stir it too much.

Step 4

Pour a little dressing on. Not all of it. Just enough to make things shiny. Serve it right away.

Notes

  • Use good peaches. Seriously. If they're hard the salad won't be as good.
  • The feta that comes in a block in brine is way better than the dry pre-crumbled stuff.
  • Don't dress it until you're ready to eat. It will get soggy if it sits around.
