How to Make Your Snowmen

Step 1: First thing’s first, line a baking tray with some greaseproof paper. Just set it aside for now.

Step 2: Toss the cookies into a food processor and blitz ’em until they’re fine crumbs. If you don’t have a food processor, no worries! A rolling pin and some aggression work great.

Step 3: Dump the cookie crumbs into a big mixing bowl and spoon in the cream cheese. Get in there and mix everything together until the mixture comes together and is sticky enough to hold its shape.

Step 4: Alright, time to build! Grab about 20g of the truffle mix and roll it into a ball (that’s the body), then take around 7 grams and roll it into a smaller ball (this is the head).

Step 5: Plop the smaller ball right on top of the larger one. Boom, a snowman. Set him on your tray. Just keep doing this until all the mixture is gone.

Step 6: Shove that tray into the freezer for 20 minutes or so. You just want them to be firm.

Step 7: When you’ve got about 5 minutes left, go ahead and melt your white chocolate. A bowl over a pan of simmering water is classic, but popping it in the microwave works just as well.

Step 8: Grab the chilly snowmen from the freezer. It’s time to dunk. You can stick a toothpick in the bottom or just balance one on a fork. Drizzle that chocolate all over, letting the extra drip off.

Step 9: Put the coated truffles back on the tray. Since they’re so cold, the chocolate will set super fast. I still like to pop them back in the freezer for 5-10 minutes just to be safe.

Step 10: Now the really fun part… decorating! Tint a tiny bit of leftover white chocolate with your black and orange gels. A piping bag is great, but honestly, a toothpick works fine for piping on the little carrot nose, eyes, mouth, and buttons.

Step 11: Cut a strawberry lace to size and wrap it around the ‘neck’ for a scarf. A teeny dab of melted white chocolate acts like glue to hold it in place.

Ingredients

  • 150g golden Oreo cookies (or any plain/GF biscuits work too)
  • 60g vegan / dairy-free cream cheese
  • 200g dairy-free white chocolate
  • Black food gel
  • Orange food gel
  • Strawberry laces or those candy pencils (for the scarf, obviously!)

Instructions

  • First, line a baking tray with greaseproof paper.
  • Crush the cookies into fine crumbs using a food processor or just a rolling pin.
  • In a big bowl, mix the cookie crumbs and cream cheese together really well, until the mixture is sticky and holds its shape.
  • Roll about 20g of the mixture into a ball for the body, and 7g into a smaller ball for the head.
  • Place the head on top of the body to make a snowman shape and set it on your lined tray. Keep going until you've used all the mixture.
  • Put the tray in the freezer for about 20 minutes so the snowmen get nice and firm.
  • Just before they're ready, gently melt the white chocolate in a bowl over simmering water (or carefully in the microwave).
  • Take the firm snowmen out of the freezer. Dunk each one in the melted white chocolate, letting any extra drip off. A toothpick or fork works great for this.
  • Place the coated truffles back on the tray. Pop them in the freezer for 5-10 minutes—the chocolate will set almost instantly!
  • Now for the fun part: decorating! Tint a tiny bit of leftover melted chocolate with the black and orange gels. Use a toothpick or piping bag to add the orange carrot nose, black eyes, mouth, and buttons.
  • Cut the strawberry laces to size and wrap them around the 'neck' as a scarf. You can use a tiny dot of melted chocolate to hold it in place.
  • Put them back in the freezer one last time for 5 minutes to set the decorations. Then they're ready to serve!
  • Notes

    1. Don't overheat the white chocolate or it'll get clumpy; take it slow and steady.
