French Toast for Two

This French Toast for Two recipe is pretty much our weekend uniform at this point. Forget boring dry toast. We’re talking about thick slices of bread soaked in a simple vanilla and cinnamon egg mix then fried in a puddle of butter until they’re golden brown. The best part is how the middle stays soft and eggy while the edges get all crispy. It’s just so good and it’s the one thing that makes a normal Saturday morning feel a little special.

What You’ll Need

  • 2 large eggs
  • 1/3 cup whole milk (or heavy cream if you really want to go for it)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • A tiny pinch of salt (it really does make a difference, don’t skip it)
  • 2 or 4 slices of thick bread (I love using brioche, but regular thick-cut white bread or Texas toast is great, too)
  • 2 tbsp unsalted butter (for the pan)
  • Toppings: Whatever you’ve got! We usually just use maple syrup, but berries or powdered sugar are awesome.

How to Make It

Step 1: First get a shallow dish (a pie plate is perfect). Crack the eggs into it then add the milk vanilla cinnamon and that little pinch of salt. Whisk it all together until it’s blended and all one color.

Step 2: Put a large skillet on the stove over medium-low heat and go ahead and add the butter so it can melt and get bubbly.

Step 3: Take your first slice of bread and dunk it in the egg mix. Let it soak for about 20-30 seconds then flip it over and do the same. You want it to be soaked but not so soggy that it’s falling apart.

Step 4: Lift the bread out of the mix and let the extra goo drip off for a second then place it right onto the hot buttery pan. You should hear a nice sizzle. You can probably fit the second piece of bread in there too.

Step 5: Let it cook for about 3-4 minutes on the first side. Don’t wander off. You’re looking for it to get a deep golden-brown color so flip it carefully and cook the other side for another 3-4 minutes.

Step 6: That’s it. This recipe makes exactly two servings of French Toast for 2. Get them on plates while they’re hot and add your toppings.

Why This is My Favorite Small-Batch Recipe

The real reason I love this French Toast for Two recipe is that it makes just enough. I can’t stand having one sad soggy piece of bread left over or a weird amount of egg mix to throw out. This is fast simple and feels like a romantic breakfast for two without having to do any real work. It’s just our little weekend thing.
