Okay, some nights you just need noodles. That’s how this Creamy Kimchi Ramen became a staple in my kitchen. I figured out how to take a cheap packet of instant ramen and make it taste like something special. It’s got that sharp, spicy tang from the kimchi and gochujang, but the broth is so smooth and rich it balances everything out. This whole Korean-inspired ramen thing comes together in one pot in like, 15 minutes. It’s just ridiculously good.

What Goes In The Pot
You don’t need much for this Creamy Kimchi Ramen, which is why I love it. I pretty much always have this stuff on hand.
- 1 packet of instant ramen noodles (any kind you like)
- 1 tbsp sesame oil
- 1 garlic clove, chopped up
- 1/2 cup kimchi, chopped
- 1 tsp gochujang
- 1 1/2 cups water
- 1/4 cup milk (any kind works)
- Things to put on top: soft-boiled egg, sliced green onions, sesame seeds

How to Make This Creamy Kimchi Ramen
Step 1: Get the Kimchi Going
Get your pot on medium heat and add the sesame oil. Throw in the garlic and kimchi and just stir it for a minute. Your kitchen will start smelling great, and this wakes up all the kimchi flavors before you add the liquid.
Step 2: Make the Broth
Pour in the water, the ramen seasoning packet, and the gochujang. Stir it all together. Once it’s bubbling a little, turn the heat down and slowly pour in the milk while you stir. This little trick keeps the broth from getting weird and makes it super creamy.
Step 3: Noodle Time
Now just drop the ramen noodles right into the broth. As they cook, nudge them with a fork to break them up. I like my noodles with a little bite, so I only cook them for about 3 minutes. Don’t let them get mushy!
Step 4: Bowl It Up
Pour everything into your favorite bowl. Top it with a soft-boiled egg if you have one, and throw on some green onions and sesame seeds. You gotta eat this spicy noodle soup right away while it’s hot.

I’m not kidding, this Creamy Kimchi Ramen is what I make when I want good food without the effort. The flavor you get for how little work you do is just wild.
