  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened up
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (from about 2-3 bananas)

How to Make Them

Step 1: Okay, first things first. Get your oven going at 350°F (175°C) and pop some parchment paper on a baking sheet. In one bowl, just whisk together the flour, baking soda, cinnamon, and salt.

Step 2: In a bigger bowl, beat the soft butter and both sugars together until they look light and fluffy. Then, crack in the egg and add the vanilla, mixing them in.

Step 3: Time for the bananas! Mix them into the butter mixture. It might look a little weird or separated for a second, but don’t panic, that’s totally normal. Now, slowly add your dry flour mix and stir just until you can’t see any more flour. Whatever you do, don’t overmix it.

Step 4: Plop rounded spoonfuls of the dough onto your baking sheet. Bake ’em for about 12-14 minutes. You’ll know they’re done when the edges are just starting to turn golden brown. Let them chill on the pan for a bit before moving them.

Ingredients

  • 1 and a half cups all-purpose flour
  • half a teaspoon baking soda
  • half a teaspoon cinnamon
  • a pinch of salt
  • half a cup unsalted butter softened
  • half a cup white sugar
  • a quarter cup brown sugar
  • 1 big egg
  • 1 teaspoon vanilla
  • 1 cup mashed ripe bananas

Instructions

  1. get your oven hot at 350 degrees and line a baking sheet. then mix the flour baking soda cinnamon and salt in a bowl
  2. in another bowl beat the soft butter and both sugars till its fluffy. add the egg and vanilla and mix it up
  3. mix in your mashed bananas it might look funny but thats ok. slowly add the flour stuff and mix just a little dont overdo it
  4. drop spoonfuls of dough on the sheet. bake for like 12 to 14 minutes until the edges get golden. let them cool on the pan for a few minutes

Notes

  • use really ripe bananas the spottier the better for more flavor
  • dont overmix the dough when you add the flour or the cookies get tough
  • these cookies stay soft for days in a container if they last that long
