6-7 medium apples

1/4 cup (55g) packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
A pinch of ground ginger
1 tablespoon fresh lemon juice
1 tablespoon all-purpose flour
2 tablespoons unsalted butter
, cut up into small bits
For the Biscuit Topping:
2 cups (240g) all-purpose flour
1/2 cup (100g) granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup (113g) cold unsalted butter
, cut into cubes (make sure it’s right out of the fridge)1 large egg
1/2 cup (120ml) milk
1 teaspoon vanilla extract
Coarse sugar for sprinkling on top
(optional, but it makes it look nice)

How to Make It
This is how I put together my homemade apple cobbler from scratch. Don’t worry about being perfect; it’s supposed to look rustic.
Step 1: Oven On, Apples Prepped
First thing, get your oven heated to 375°F (190°C)
. While that’s warming up, grease a 9×13 inch pan. Then start peeling, coring, and slicing your apples. I aim for about a quarter-inch thick, but it doesn’t need to be exact.
Step 2: Make the Filling
In a big bowl, throw in the apple slices, both sugars, all the spices, the lemon juice, and the tablespoon of flour. Give it a good but gentle mix with a big spoon so every apple slice gets coated. Dump the whole thing into your greased pan and spread it out. Then just scatter the little bits of butter over the top.

Step 3: Make the Topping
This is the most important part for an easy apple cobbler with biscuit topping. In a different bowl, mix the flour, sugar, baking powder, and salt. Add the cold butter cubes. Now, you need to cut the butter into the flour. You can use a pastry tool, but I just use my fingers. Rub the butter into the flour until it looks like coarse sand with some bigger, lumpy bits left. In a small cup, whisk the egg, milk, and vanilla. Pour that into the flour mixture. Now, and this is critical, DO NOT overmix. Just use a fork to stir it until you don’t see any more dry flour. The dough is supposed to look shaggy and a little ugly. That’s how you know it’ll bake up light and fluffy.
Step 4: Put the Topping On
Take big spoonfuls of the topping dough and just drop them onto the apples. Don’t try to spread it out or make it a solid sheet. You want to leave gaps for the filling to bubble through. If you have some coarse sugar, sprinkle it over the dough now.
Step 5: Bake It
I learned this the hard way: put the baking dish on a bigger baking sheet to catch any drips. Bake it for 40 to 50 minutes. You’ll know it’s done when the topping is golden brown and the filling is bubbling up like crazy around the edges. You have to let it cool for at least 15 minutes. If you cut into it right away, the filling will be like lava and run everywhere.

Instructions
Step 1
oven on at 375 grease a 9x13 pan then peel and slice all your apples
Step 2
in a big bowl toss the apples with all the other filling stuff just mix it up good then dump it all in the pan and dot the butter on top
Step 3
for the topping mix the flour sugar baking powder and salt then work in the cold butter with your fingers til its like coarse crumbs in a small cup mix the egg milk and vanilla then pour it in and stir just a little bit seriously dont overmix it should look messy

plop spoonfuls of the topping dough over the apples leave some space so the filling can bubble through sprinkle with extra sugar if you have it
Step 5
bake it for 40-50 minutes its done when the top is golden brown and its bubbling like crazy let it cool for at least 15 minutes before you serve it
Notes
-using a mix of apples like granny smith and honeycrisp is way better
- seriously dont overmix the topping dough or it gets tough
- put a baking sheet under the dish in the oven it might bubble over and make a mess
